Hi! I'm Pamela the baker behind JOY! I'm excited to share my love for baking with you! After 7 years of living a low carb lifestyle I know how important it is to enjoy a slice of delicious cake to celebrate the most significant moments without having to put your health on hold. After baking my way through Colombia and Costa Rica I am now ready to share the JOY of low carb bakes in the Charlotte area. At JOY you can find cupcakes, cookies, special seasonal treats and design your very own bespoke cake or cupcakes, for any big or small occasions.  All of our bakes use alternative natural substitutes like almond flour, erithrytol and clean ingredients.
